The Aubrey opens at The Mandarin Oriental, Hong Kong

The wait is finally over – Maximal Concepts’ latest restaurant, The Aubrey, will be opening its doors this Wednesday, 17 February at The Mandarin Oriental, Hong Kong.

Located on the 25th floor of the luxury hotel, The Aubrey is a Japanese izakaya with an interior design inspired by Japanism – a 19th century European movement influenced by Japanese art. Inside are three different bar experiences headed up by Devender Sehgal, who was most recently bar manager at Otto e Mezzo Bombana.

At The Aubrey’s main bar, Devender and his team will be mixing up a selection of Highball and Chuhai cocktails, a chess-inspired signature cocktail menu and rotating selection of three seasonal cocktails based off a Japanese ingredient.

For a spirited journey, head to The Aubrey’s four-person Omakase Cocktail Bar to take a trip with drinks featuring Japanese spirits and flavours. The third and final bar is the Champagne and Sake Bar, which will focus on oysters and champagne, plus sparkling sakes.

Food at The Aubrey is led by chef Yukihito Tomiyama, who hails from the one Michelin-starred Shinji by Kanaseka in Macau. At lunch, expect beautiful bentos featuring The Aubrey’s raw, tempura and robata menus and by night, it’s time to indulge in world-class sushi and sashimi made in the traditional Edomae style, plus tempura and grilled meats and seafood cooked over binchotan charcoal.
