Florilège in Tokyo has been named the winner of the One To Watch Award, which for the first time, honours a restaurant that is outside the 50 Best list.
Previous One To Watch winners had been chosen from within the 50 Best list, and the change reflects the organisers desire to acknowledge up-and-coming restaurants and their potential to break into the prestigious list in the near future.
In a press statement, William Drew, group editor of Asia’s 50 Best Restaurant, says, “Asia’s 50 Best Restaurants is committed to inspiring young talent and showcasing up-and-coming restaurants. In keeping with this goal, we adjusted the selection criteria to recognise a restaurant outside of the 50 best-ranking to emphasise the quality of young talent in the region and to shine a spotlight on a restaurant of the future.”
Florilège, which serves modern French cuisine in a small intimate setting, opened in 2009. Owner-chef Hiroyasu Kawate is expected to formally accept the award at the 4th annual Asia’s 50 Best Restaurants awards ceremony on February 29, 2016 at the W Hotel in Bangkok, Thailand.
