Ever since Cafe Gray Deluxe shut its doors at the end of 2020, everyone’s been wondering what would take its place next. Well, the wait is over, as The Upper House has just announced that a Mediterranean dining concept, Salisterra, will be opening on the 49th floor of the luxury hotel in mid-April 2021.

The name Salisterra comes from the Latin words for salt (salis) and earth (terra), and the menu of the much-anticipated new restaurant will focus on the coastal cuisines of France and Italy crafted by London-based Michelin starred chef Jun Tanaka.

Expect the same understated elegance and attentive, personalised service we’ve come to know The House Collective for, as well as top-notch food and drinks by Salisterra’s talented mixologists and sommeliers.

In terms of the setting, André Fu has put his magic touch on Level 49 using earthy colours of the Mediterranean, which will no doubt complement the striking view of the Hong Kong skyline.
